Fattoush is a Lebanese salad that is both juicy and crunchy; perfect for hot climate. This salad is made from all natural, unprocessed ingredients; very ideal for those watching their weight. Sumac is made from red berries which is commonly sold ground, somewhat gives a sharp, distinct flavor that complements the crunchyness of the lettuce, cucumber, and radish.
1 lettuce, washed and chopped
1 bunch of parsley, chopped
1/2 bunch of mint leaves, washed and drained
2-3 medium cucumbers, peeled and cubed
7-8 medium radishes, sliced
1 medium green pepper, diced
1 medium red pepper, diced
1 punch of purslane (baklé), washed and drained
1 medium onion, thinly sliced
2 green onions, chopped
2-3 cloves garlic, crushed
1/4 cup pomegranate syrup (debs-el-roumman)
1/2 cup lemon juice
1/4 cup olive oil
1/2 tsp. paprika
1-2 Tbs. sumac
salt, to taste
2 pita breads, cut into squares, toasted
- Combine all the vegetables, except the garlic, in a large salad bowl.
- Whisk together the pomegranate syrup, lemon juice, oil, sumac, paprika, salt and crushed garlic.
- Pour this sauce over the vegetables and mix thoroughly.
- Top with the pita bread squares and serve immediately.
